A natural substance found in ordinary carrots that protects the root vegetables from fungus has been found by researchers to help protect those who eat them from cancer. A team of researchers from the University of Newcastle upon Tyne in England and the University of Southern from Denmark has found the natural pesticide falcarinol reduced the risk of cancer developing in rats by one third.
The study results, published Wednesday in the Journal of Agricultural and Food Chemistry, are regarded by experts, including Israelis, as significant, as they could contribute to healthy eating advice for consumers and recommendations for growers and may eventually aid the development of anti-cancer drugs.
